●Chocolate Cake – A Very Very Evil Recipe


Warning! This cake is not good for your health.
One bite & you can’t stop eating it!

Patrick’s Chocolate Buttermilk Cake De Lux (the Devil’s Cake!)

250g cake flour (2 cups)
50g cocoa (1/2 cup)
1 tsp. bicarbonate of soda
1 tsp. baking powder
1/4 tsp salt
3 large eggs
300g sugar (1 1/2 cups) (brown is OK)
125 ml sunflower oil (1/2 cup)
333 ml buttermilk (1 1/3 cups)
1/2 tsp. vanilla essence

1. Sift first five ingredients together onto a plate
2. In another bowl, whisk eggs and sugar together (3 – 5 mins on high speed in an electric mixer) until think and pale in colour
3. Still whisking pour in the oil in a steady stream
4. Stir in buttermilk and vanilla essence
5. Fold in flour/cocoa mixture very lightly, just until flour disappears
6. Pour mixture into a buttered and floured or non stick, ring mould or a deep 25 cm cake pan or two shallow 25 cm cake pans.
7. Bake at 160 C [320 F] for one hour for deep pans or 30 – 45 mins for shallow pans. Leave in pan for 10 mins then turn out to cool on a rack.

The Icing
Melt 150g dark chocolate.[5.29 oz]
Remove from heat and add 175 ml buttermilk or plain yoghurt. [6.17oz]
Mix well.
You can put it in the fridge for a bit if it’s too runny or heat again gently if it is too thick.

I have never met anyone who is able to take their first bite and not stop in their tracks and exclaim with delight
